THE CIRCLE ⭕

This cake is inspired by two defining parts of our executive pastry chefs life — The first experience, learning the iconic New York-style baked cheesecake and second, the childhood winters in Rajasthan, where freshly harvested sesame from his family farm was transformed into til gajak.

Encased in cocoa mass mousse, this creation brings together the richness of cheesecake and the nostalgic warmth of sesame and jaggery. We named it The Circle because memories and experiences have a way of coming full circle, reconnecting our roots with our journey.

A handcrafted chocolate football reveals peaches from Fredericksburg, Texas, gently cooked in honey and paired with Qubani Murabba (apricot compote), alongside a salted 64% Guayaquil chocolate mousse for richness and balance.
