Q+A With Part 4 I Crab Cake 🦀
🦀 What inspired you to create this new Crab Cake dish? We needed a new seafood option in our appetizers section, and I love crab cakes, plus it fits into an American tavern perfectly.
🦀 What makes this crab cake different from a classic version? So its a pretty classic recipe, but its extra moist, and then it gets crusted in a parmesan bread crumb mixture for a super crisp texture on the outside. We serve it with our dill remoulade sauce which really elevates it!
🦀 Tell us about the remoulade-what flavors should guests expect? Very herbaceous, great citrus not to help balance the fat in the cake, and adds a creamy texture throughout the whole dish.
🦀 Our hot sauce is made in-house. What went into developing it, and what's its flavor profile? So we grow all the peppers from our garden and then we ferment the sauce in house. Its a blend of fresnos, jalapenos, habaneros, ghost peppers and carrots to sweeten and balance the sauce.
🦀 How poes the house hot sauce complement the sweetness of the crab? It's a fiery touch that heightens the dish, and compliments the crab very nice. The heat is mid level but adds a great peppery flavor to the plate.
