How to trim a brisket 👇

1. Remove the Hard Fat (Bottom Side): Flip the brisket fat-side down. Locate the large, hard, "moon-shaped" piece of fat between the point and flat muscles and carve it out.
2. Remove the "Mohawk": Flip the brisket to the fat-cap side (top). Trim off the hard, thick ridge of fat and meat—often called the "mohawk"—running along the edge of the flat.
3. Trim the Fat Cap: Trim the main fat cap down to a consistent ¼ inch thick. Remove any thick, hard chunks, but keep a layer for moisture.
4. Shape and Square: Trim away any thin, dangling, or discolored meat edges. Round off sharp corners to prevent them from burning, creating a smooth, aerodynamic shape for better smoke circulation.
