Our last AAPI Collaboration ( #6-7) (and yes I hear it)
Maham Qureshi of sells her amazing Pakistani inspired croissants inside the Post Food Hall! Today’s flavored is inspired by Pakistani rice pudding, Kheer. Boiled rice cooked in milk, ghee and cardamom with a touch of not too sweet sugar. Saturdays pop will be sold at Hutchins, Brittmoore and Post Food Hall locations!
Nick Wong and I connected through our upbringing of 90’s r&b. When you have 5 top 3 Boyz 2 Men songs; then I f***s with you. Our collaboration is inspired by his crab Rangoon dip dish . And didn’t mention he’s a JBF finalist this year for Best New Restaurant?!

Laphet Kouign Aman, fermented tea leaves and maple sugar laminated between the layers, baked with the crunchy seeds & nuts and finished with a lime fish sauce glaze. This heightened my obsessed with laphet, majorly good. If you’re a “foodie”…

Pineapple Bun Profiterole filled with salted coconut and mung bean swirled sorbet topped with pineapple tepache jam and capped with a the crunchiest egg streusel. Pretty damn good, said everyone.

AAPI COLLABORATIONS #2!
Starting on Saturday (May 16th) Koffeteria is pairing up with and serving a hybrid pastry never made before, Pineapple Bun Profiterole! Part Pineapple Bun part Profiterole, filled with coconut sorbet with streaks of mung bean paste topped with caramelized pineapples and topped with the classic pineapple bun streusel!
Sunday (May 17) we are pairing up with Suu Khin of and creating a unique take on one of my favorite Burmese dishes, laphet thoke (fermented tea leaf salad). We are making a maple kouign aman, paired with the garlicky fish sauce flavors of the tea leaf salad. The tea leaves will be laminated throughout the dough, finished w a crunchy maple crusts and a touch of acid, and crunchy garlic toppings. It has major creative, uniqueness, nerve and talent—and she funky.

Mother’s Day (May 10), my lovely Mother and I are doing a collaboration dish! We are making Chicken and Dried Shrimp Congee with house grown mung bean sprouts, fried garlic and a touch of fermented soy bean paste. It is paired with a Croissant Youtiao, a Chinese fried doughnut inspired croissant! It’s definitely a first of its kind, taking a modern spin on something not just Cambodian tradition, but East Asian!!
Cambodian Cream Pie
Flourless sponge cake soaked in palm sugar caramel, topped with palm sugar pastry cream, and kaffir lime leaf ganache. Like a Boston Cream Pie, but Cambodian! (And gluten free!)

We are literally boxed in between the 45 N expansion a building the stage for FIFA, under complete construction. It is already incredibly hard to run a small business, now I have to combat the ignorance of Houston “progression”.
A continued thanks to everyone who is trekking through this already months long mess. We continue to sell out of pastries, but this does not by any means make it easy. Be someone, who does better.

We are celebrating Cambodian New Years this weekend with a collaboration menu with my Mom! She reminisces on her childhood New Years in Cambodia with menu items like Sach Ko Ang (grilled steak with papaya salad) and Nom Masan Jaek (sticky rice with bananas)
But all turned into a pastry!! Trust me she didn’t understand why I wanted to pastrify these traditional dishes, but it’s happening!!

If you are driving, take I-45 South and exit on Cullen Boulevard. Turn left onto Cullen Boulevard and continue for approximately 1 mile until you reach Hutchins Street. Turn right onto Hutchins Street and park your car in any available parking spot nearby.
