Who’s DTF?!! Our DTF #2 is dropping this wkeend!! We have….
Fig, Goat Cheesecake and Pistachio Cream Cake
Fresh figs layered in a tangerine goat cheesecake, topped and bottomed with pistachio biscuit (bis-squee, that’s flourless in French pastry)
Char Sui Mushroom Quiche
Jiggly cheesy custard, topped with Char Sui Mushrooms (colored and sweetened with Beet juice) baked in a crunchy whole wheat, flaxseed, psyllium husk crust. Served with a side salad.
Double Dark Chocolate (Lily's) Ice Cream Sandwich crusted with salted caramelized cocoa nibbs. It’s hot outside, nuff’ said.
All 3 menu item are diabetic friendly, using ingredient’s that have subbed out white devil sugar for agave, coconut sugar, isomalt, allulose, monk fruit and stevia for its sweetness. Double and tripled fibers and protein for that gym bro obsessed with being “regular”.

Our first DTF series (diabetic to feed) bc sugar free sounds like a bad 90’s advert for chemical flavors:
Mangosteen Cream Cake
almond sponge cake, vanilla cream mousse, fresh mangosteens. Mangosteen considered the queen fruit of Southeast Asia, and my favorite fruit of all time. It’s in szn, so we using it! Diabetic friendly, with tons of protein, fiber and fat to slow down that blood sugar absorption!
Cambodian Sour Soup Focaccia
(Somlor Machew Kreung) topped with tamarind butter.
Sourdough focaccia, spiced with kreung (lemongrass, kaffir, garlic, Thai chili and galangal) then finished with tamarind butter. Sourdough is a beautiful thing for diabetics because the fermentation of the flour allows for slowing absorption, converting into acetic acid. Then we added some fiber like whole wheat flour and psyllium husks, to make sure your blood sugar won’t be spiked while eating wheat products (especially with the added fat from the tamarind butter). It’s smart, it’s tasty, and very much Cambodian inspired.

Update: Thank you to everyone who reached out with concern over my health. I took a week off and spent time with family in Lake Michigan, to recenter myself and really live in the reality that I am a diabetic. I have had a few tough months adjusting to my medications, changing my lifestyle, and really listening to my body.
Koffeteria has always been an extension of my experiences, and I was truly touched by all the restaurant and bakery owners that let me know their little secret: they too are diabetic. It’s insane to think that the people who feed people are diabetics.
Something’s gotta change.
Starting this weekend we will be offering Diabetic Friendly pastry items along our original items. With the help from my nutritionist/dietician, we will be creating a menu that not only tastes one of kind Koffeteria, but also nourishing to the body.
I’m evolving, therefore Koffeteria’s evolving. I’m not sure what crazy things I’ll come up with, but the intent is too real to ignore. I’m excited about this next chapter, regardless it will be delicious.
And yes, they will be served Lil’ Koffeteria too!

For the past 3 weeks I have been having problems catching my breath. Recently diagnosed as a diabetic with very high blood pressure, I attributed that to my new regimen of 4 types of medications plus GLP-1 injectables.
Yesterday, as I began to workout, 15 mins in I become super light headed and passed out for what felt like a few seconds. Woke up and called my Mom, and she stayed with me for a few hours until I could catch my breath. It came back again at night, terrified I took an allergy pill that put me to bed. Woke up at 3 am, couldn’t breathe. That’s when Andreas rushed me to the ER. They concluded that my blood sugar had dropped drastically, causing me to faint. The doctor asked me if I was experiencing any unusual stretches of stress or anxiety within the timeframe I was experiencing such breathing problems. The answer, of course I was.
I was fighting to keep a float a bakery that I poured my entirety into, that felt like was being discarded and forgotten. I am incredibly stressed watching it all go to s**t. And it got to me physically. I had an anxiety attack that lasted about two days (and counting). It is not easy being a cook, especially one that owns his own business.
We all need to be grateful for small businesses that triumph over failure’s. We are just moments, and moments don’t lasts.

I’m having an emergency this morning. We’re going to close both shops so we can figure this out. Sadly we won’t be able to take over the pastry case today. We’ll update when we have more info.

Same place same message. We want to thank everyone who has showed up to support our products !! It means a great deal to us to sell out everyday, the service interruption really put a huge damper on our message! Very thankful for industry friends & for comrades in and out the kitchen. To the real ones, we keep cooking for you.

To reach the coffee shop at Hutchins in Houston by public transport, you can take the METRO bus to Hutchins/Cullen Transit Center. The coffee shop is located within walking distance from the transit center.
If you are driving, take I-45 South and exit on Cullen Boulevard. Turn left onto Cullen Boulevard and continue for approximately 1 mile until you reach Hutchins Street. Turn right onto Hutchins Street and park your car in any available parking spot nearby.
