Sylvia Casares hand-rolls each of the 20 enchilada varieties at Sylvia's Enchilada Kitchen to order, seasoning the tortillas before they are filled. The chili gravy underneath is the part she says defines her, a border recipe she learned by watching rather than from anything written down. It is bottled now, sitting on Central Market shelves.👇

So where did Tex-Mex actually come from?
Sylvia likes to call it “the original fusion food in this country.”

- Take the METRO bus line #25 or #47 to the stop nearest Woodway Drive.
- From there, walk along Woodway Drive until you reach the restaurant.
If you're driving and need parking:
- From downtown Houston, head west on I-10 and take exit 761C for Voss Road.
- Turn left onto Voss Road, then right onto San Felipe Street.
