We talk a lot about what we serve here.

But maybe the better story has always been who we get to serve it to.

The ones who have worked long enough to carry some of it in their hands.
Who have lived enough life to know that faster was never the same thing as better.
Who still pull out a chair when someone they love goes to sit down.
Who tell the same old stories and laugh in the same places and nobody minds because one day you realize hearing them again is its own kind of gift.

Those are the tables we want full.

Not just with orders.

With people who bring whole lives through the door with them.
Years of work. People they’ve loved. Things they’ve lost. Stories worn soft from telling.

And for an hour or two, they sit here.

They eat something good and let the world spin on without them, because maybe a life doesn’t always need to be chased. Sometimes it just needs to be sat down inside of.

That’s the kind of full house we’re after.

Paul thought he could let his birthday quietly pass without his Citizens family finding out.

A few of our staff had other plans. After Chef’s Dinner, they told the restaurant it was his birthday.

This was the reaction.

And maybe that tells you a little something about Paul.

When you spend your days taking care of people, remembering the details, making sure everyone else has what they need, and giving more than what’s required of you, people notice.

And when it’s finally your turn to be celebrated, they’re pretty happy to return the favor.

Paul worked on his birthday. He showed up for Chef’s Dinner. He served everyone else before ever mentioning a word about himself.

So there was no way we were letting the day end without making sure he knew how loved he is around here.

Citizens family, help us wish Paul the happiest birthday!

Paul, thank you for the way you take care of this place and the people inside it. We’re really grateful you’re ours!

There’s something about hearing, “That’s why we’re back. And we’ll be back again.”

Dolores came in a couple of weeks ago and found her way back through our doors.

Before a drink ever makes it onto our menu, there are moments like this.

Paul has something he's been working on. Kenneth gets the first taste. There's a little conversation about what's in the glass, a few opinions exchanged, probably a story or two told along the way.

And if you've spent much time at Citizens, you know these two can turn just about anything into a good conversation.

But there's something about this picture that tells a much bigger story than a drink being passed across the table.

Because what you see here is two people who have poured so much of themselves into Citizens.

They think about the food you'll order. The drink you'll try for the first time. The person you'll bring back because you want them to experience it, too.
They think about what makes an ordinary Tuesday worth getting dressed up for. What makes someone drive an hour for dinner. What makes a couple choose Citizens to celebrate another year of marriage, or a group of friends stay at the table long after their plates have been cleared.

And what we wish you could see is how much they enjoy being part of those moments.

The excitement when a new cocktail finally makes it onto the menu. The conversations about a dish they've been wanting to introduce. The stories they tell about the people they've met and the places they've traveled that have inspired something you can now order right here in Hempstead.

There's a whole world of thought and conversation that happens before anything ever reaches your table.

And sometimes, it looks as simple as Paul handing Kenneth a drink and waiting to hear what he thinks.

We hope the next time you're here, you'll get a chance to spend a few minutes with these two.

Ask Paul about the cocktail you're drinking. Ask Kenneth about the inspiration behind a dish. Give them a chance to tell you a story.
