The trick with a simple cheese pizza is to use a combo of complimentary cheeses for depth and a single herb that adds character (basil, oregano, rosemary, or thyme).
This is the Di Fara Trinity — low moisture NY style shredded mozzarella, fresh (wet) mozzarella for creaminess, and freshly grated pecorino romano (or similar) for salinity and nuttiness. All in the family. ❤️🍕🙏

And this is how you do a Doughfather pizza party. Every pie a unique character. You acquaint with them all and build a deep connection with one. Star of the show seems to be the potato pie, surprisingly light and remarkably flavorful. Potatoes, bacon, onion, jalapeños, mozzarella, cheddar, black pepper and chives. Not to overshadow the others—truffle cream and cremini mushrooms, pepperoni and homemade hot honey, brussel sprouts and kerrygold cheddar and many others in this cast of 8. 6 thin crust with secret dough, 2 NYpolitan dough. Just warming up for thanksgiving.

A product of last week’s pizza class — jalapeño, basil, cherry tomatoes and cold mozzarella with olive oil and black pepper. Kinda like a spicy caprese salad over a marinara pizza. So yum.
