Over the last two years, Mindy has been such an important part of Space City Cow—behind the camera 📸 capturing our events, collabs, and new flavors, but also as a true friend and part of our family.
She’s been with us since the beginning and one of our biggest supporters, and we’re so grateful for everything she’s brought to the shop.
As she and her family head to Dallas, we wish them safe travels and nothing but success in this next chapter. We’ll miss them, but we’re cheering them on all the way.

🚨Galveston Bay Brewing Collab🚨
Guys, this one is special! We teamed up with our friends at Galveston Bay Brewing to bring you a whole new coffee ice cream experience! We took their Captains Coffee Stout made with a special blend from Indies Coffee on Galveston Island, cooked it down with espresso and mocha, then loaded it with chocolate-covered espresso beans, fresh Space City Cow brownies, Belgian chocolate, and caramel to create what we call “Galveston Bay Night Pour”, available now at Space City Cow!
