We will have some new lunch specials that should be tasty and faster during the afternoon services.
Ill have a different High School Cafeteria Lunch on the menu everyday for the next two weeks. Today we did Crispy Fried Chicken tenders with Togarashi seasoning, buttered sweet green peas, creamy garlic mashed potatoes and gravy, cornbread, red beans and rice, and charred tomato chopotle chutney. Ill prep this again for tomorrow but everyday will be different after that. I hope yall like this, flavors are great but the presentation is my favorite 🙂

I've been getting whole bone in pork loins in and cutting them here on a ban saw then marinating them in ginger, garlic, orange juice, chipotle, molasses, and brown sugar. They've been delicious and selling well but I kept thinking the dish was missing something. The other night for some crazy reason the scene from Boardwalk Empire with Chalky White at the dinner table with his family saying he wants his hoppin john made me think.... Thats it, lets make our version of hoppin john to go with the chops! So here it is Mr. White, your hoppin john with pan seared house cut pork chops!
Ill have these on the menu for a while now
House cut Molasses Chipotle Ginger Brined Pan Seared Pork Chops served over homemade hoppin john with black eyed peas, collard greens, Okra, bacon, and smoked sausage. With the sticky jasmine rice, cornbread, and homemade hot sauce im pretty proud of this one y'all 😁

We will have the Irish Spice Bag on the menu for a while now!
Crispy fried skin on chicken thighs stir fried with sweet onion, bell pepper, crispy seasoned fries, shaved jalapeño, five spice dry rub, and duck fat served with a sweet and sour sauce and a homemade curry sauce
Oh and we will be open on Mother's Day from 10am till 2pm with a limited menu, if any Moms have requests for speciasl let me know, im writing and testing the menu over the next two days.

Made Jambalaya today!
Garlic roast pork, pork belly, smoked andouille sausage, marinated chicken, garlic, homemade duck tallow, and green onion creole jambalaya topped with a crispy fried egg and homemade sweet and spicy duck cracklings! Soooooo yummy!

I saw someone talking about how good the filet o fish is from the golden arches so I went and had one yesterday... im sorry that sandwich exist!
I made a beer battered Southern style filet o fish with crispy beer battered haddock, jalapeño blueberry coleslaw, american cheese, bread and butter pickles, Cajun tartar sauce, and a lemon herb dry rub on a toasted potato roll. This should be a touch better then the one I had yesterday 🤣 yall have a great day!

We made Southern style braised lamb shanks for the first time in years! I will have these on the menu more often, they turned out great!!
I will make them for the next 2 days for sure.

I've been having crispy cajun fried pork steaks on the menu this week, they go perfectly with all our 3 different beans and rice plates but I've also been wanting to do a nice fried pork chop sando soooooo I made this today and I'll run it for a special this week.
We made a house cut pork steak brined for 2 days in steers syrup, garlic, salt, and herbs then crispy double fried and served on a toasted Hawaiian bun with Southern style pimento cheese, shaved lettuce, tomato, kewpie mayo, togarashi spice, and a homemade sichuan pepper hot honey sauce. I hate pimento cheese but it works so nice on this sando I hope yall like it! Come hungry, it's a huge sando😁

We will have Crispy sweet onion and fried Gulf shrimp on the menu for a while.
When I was just a Wee Lad in lake Charles I used to love to eat at Cottons hamburgers because fries always taste like fried onions, when I got older I realized they taste so good because they fry so many orders of homemade onion rings the oil was pretty much seasoned with onions. I hope yall like this one, the shrimp taste amazing with the seasoned fried shaved onion and the oil we used adds a nice onion flavor as well!

Since it's so cold I figured I'd make something worth coming in today for!
It's cold A.F. Special😁
2 homemade Buttermilk biscuits topped with crispy fried chicken, chorizo peppered cream gravy, 3 fluffy scrambled eggs, seasoned hash browns, and cast iron crispy fried pork al pastor. Should keep ya warm for the next few days!
Also since it's so cold I figured we'd do 1/2 off gumbo cups and bowls today. Yall be safe and warm, we'll be here till 4pm today

Double Cooked Creamy Cajun Smothered Chicken
Hickory smoked 1/2 chicken smothered in a Creamy cajun gravy. Served with fragrant jasmine rice, 2 sides, sweet cornbread, and a Chipotle tomato chutney.
Saw a recipe we used to do back in culinary school where we made chicken wings in a similar sauce and thought I'd try it out... it works so nice with the smokey tender chicken! Y'all stay warm this weekend🙂

I have all these older cookbooks I've collected since college and I thought it'd be fun to recreate some of these old Cajun Creole recipes as specials at the café.
Tonight we made this one from Cajun Cooking by Norma MacMillian from 1987
We made the pork rib Jambalaya with our own little twist to it. I braised pork ribs in duck fat, smothered down pork sausage, pork belly, creole spices, red bell pepper, fresh Oregano, and garlic in fragrant jasmine rice. Finished with shaved green onion. It really turned out nice!

So many folks have such cool things to say about the café while im in the kitchen every shift wondering how I can do better and freaking out😂 It's nice when your passion is accepted and appreciated. I really love cooking for y'all, thanks for all the support over the years. Many more fun dishes to come in the future. Be well family!
