Time to make the Gumbo!!!

I'm not bragging. Okay maybe I am, but not in a prideful way. ❤️

Gumbo is a family tradition on Christmas Day in our family. When we were opened for business our customers insisted we made our gumbo year-round. That's because a good gumbo makes you feel good even in the summertime. ❤️

Restaurant gumbo and homestyle gumbo are rarely close to each other. The exception is usually when made by a mom and pop eatery.

If you want to learn to make gumbo your family and friends will love, hit me up. I'll be more than happy to teach you how to do it right. When you learn how to do it right you can do it with your eyes closed, because your tasetbuds will tell you when its right.

It ain't no 30 minute dish. Contrary to popular belief, it's not made with everything in the fridge. Lol. To get the best from every ingredient you must know when to add everything.

Baby it's cold outside.

No I'm not singing a chorus of the much loved Christmas song made famous back in 1949 by Dinah Shore and Buddy Clark. ❤️ I mean it's really cold outside here in Houston, TX and expected to get colder.

As you bundle up yourself and or the kids, remember that person who is on the streets without a coat, hat or gloves. If you can spare a few dollars run into Walmart and buy a pack or more of some thick socks. Order some hand and toe warmers from Amazon. When you see that familiar or unfamiliar person, hand them a bag with some of those items in it. You can even get lap warmers from Amazon. Maybe some gloves, knit hats and rain ponchos. Keep a few bags in your vehicle to pass out to and from work. They may not appear to be much, but I promise you they will be on days like this morning feels.

We took it easy for dinner tonight. I took some of the leftover turkey and mixed it with some seasoned ground beef and black beans then made nachos. Don't let that turkey go to waste. Dice it up, freeze it and rework it into soups, casseroles, chili, rice and more.

Times up for the Thanksgiving leftovers!!!!

If you haven't already, it's time to put all Thanksgiving leftovers in the freezer if prepared on Thursday. If prepared on Wednesday and reheated on Thursday it should have been frozen on Friday. The longer it sits the more bacteria grows. Be safe.

The attached photo is how I store my leftover dressing. It will be even better on Christmas or New Year if we want any. It will hold for at least 3 months in the freezer. When we want dressing I pull out a ball for each of us. Thaw it and reheat.

Place in the freezer for a few hours then place into freezer bags.

The turkey is done. The dressing is done. That bird you see peaking our of the dressing is my secret seasoning ingredient. It's a duck. I always prepare our dressing with duck. The duck fat adds a richness you can't get with other foul. The meat is not shredded the dressing. I remove the duck and we enjoy it. I don't like shredded meat in my dressing. Lol. Sweet potatoes and mac ate in the oven. Collards are done. It's just me and the hubby so there is way more food than we can eat in 2 to 3 days. Lol. Much will go into the freezer and enjoyed later.

I flipped the bird.

He was turned over this morning to start the drying of the skin. This part of the process is what I believe mimics what you get when you deep fry turkeys. The exception is this is way cheaper, tastier and way more juicy than a deep fried turkey. Oh and you can't dismiss fewer calories, because of the lack of peanut oil deep fried turkey is fried in. I will brush off most of that seasoning on the skin before placing in my oven because it will burn during the high heat. I season the skin for those who like eating it. If you don't like eating the skin you can skip seasoning it.

If your turkey hasn't thawed by today you are not going to get the best tasting turkey you can get. Even if you dont do as I do, you're turkey should be ready for seasoning. Turkeys need a good amount of salt as well as other herbs and spices to be tasty. The earlier you season it the longer the seasoning has time to pe*****te the meat.

Turkey's in the fridge!

It will be flipped later tonight. I flip it so the skin can start to dry out til Thursday when I'm ready to cook it. It will sit uncovered on the lowest shelf of the fridge. Never place your raw meats above other foods.

Once I'm ready to cook it will go into my 430 degree Fahrenheit oven until the breast reaches 155 degrees and the thighs reach 180 to 185 degrees. Once removed from the oven I will tent it under foil until ready to slice. This allows the meat to complete the cooking process and reach 165 to 170 degrees on the breast and 190 on the thighs.

This year I decided to separate the thigh and legs from the breast. That's not the norm for me. If I left it intact I would not pull it until the thigh reaches temp as described above. Trust me, the breast will not dry out.

I've attached two photos that are of the fridge and freezer temps in my units. I'm a firm believer in these temps for food safety. Not only did I set them to this temp in my commercial kitchen when we were open but also in our home. These temps help keep your food as safe as humanly possible.

Remember food safety is going to make your holiday meals even more enjoyable.

Time's up!

Your turkey should already be in your fridge thawing out. If it's not it will have ice in it on Thursday. If you haven't placed it in the fridge you can do the quick thaw method. Place your packaged turkey in a sink or clean bucket large enough to submerged the turkey in cold water. Do not remove the turkey from the plastic wrap it came in. A 15 to 18 pound turkey will take 3 to 3.5 hours to thaw enough today to be ready on Thursday. Because I preseason my turkey for no less than 3 days it will be thawed today and seasoned tonight or Monday morning.

The countdown has started. It's Time to start chopping up all your onions, bellpeppers, celery and anything else you use to season your Thanksgiving dinner. Get them chopped and bagged. Flatten the bags and place in the freezer. You'll thank me the week of Thanksgiving when you don't have to do it in a rush. I've already done mine. MiMi J does not do all night cooking for Thanksgiving. Early prep is the key to a more relaxed Thanksgiving day.

You still have time to join The Great Turkey Day Zoom. We will meet to prep the turkeys on Sunday, November 23, 2025. If you want a tasty turkey that the non-turkey eaters will be talking about til next year, you'll want to join me for this free class. Don't go spending money on peanut oil and a turkey fryer.
