Thank you for the love of cooking, hardworking and caring grandpa, I’m forever inspired and looking to perdure your culinary legacy ! Don’t go annoy grandma too much up there ! 🕊️

There are people in life who leave behind more than memories.
They leave behind a way of doing things, a passion, a spirit that keeps living through the people they touched.
My grandpa, Clovis, was one of those people.

From the very beginning, there was a special connection between us. We shared the same birthday — June 13th — and growing up, I always felt like that meant something deeper. Even more, Clovis is my middle name, something I now carry with even greater pride.

He was an incredible chef and pastry chef, gifted not only with talent, but with his hands. He could create beauty out of anything. I still remember him sculpting flowers out of marzipan, or turning a simple potato into shoes, flowers, or little works of art. Toward the end of dinner, he would look at me and say, “Tony, go grab me a potato.” I already knew what that meant — he was about to teach me something again.

Cooking was never just food to him. It was love.
The way he expressed himself was through hard work, through creating, through watching the expression on your face when you tasted or admired something he made. That reaction meant everything to him.

In Port-Cros, near my hometown of Hyères in France, he owned a restaurant that reflected who he was: passionate, original, and larger than life. He even did an underwater photoshoot cooking beneath the sea to promote the restaurant — something so uniquely him, blending creativity, boldness, and his endless love for his craft.

During his retirement years, his artistry never stopped. He continued creating beautiful desserts and cakes, always sharing his passion with others. He taught me how to make my very first croquembouche, a memory I will carry forever.

He was, and still is, one of my greatest inspirations.
He taught me the value of working hard, striving to create something meaningful, and inspiring others through passion and dedication. In so many ways, the person I am becoming is rooted in the example he gave me.

Thank you, Grandpa, for everything you passed down to me — not only recipes or techniques, but a way of loving through creation, discipline, and generosity.

You inspired people your whole life, and you will continue to inspire me for the rest of mine.

( A classic in my region, and particularly in my family, it’s traditionally called « soupe au pistou », a pesto based vegetarian soup, with bunch of vegetables and topped with grated Parmesan. This version is my grandmother’s recipe) !

We just returned from the beautiful Veneto region of Italy, where we had the chance to reconnect with family, traditions, and the simple beauty of honest cooking.

Walking through Venice, tasting cicchetti in small bàcari, sharing meals around family tables — it reminded us that great cuisine doesn’t need to be complicated. It needs intention. Quality ingredients. And heart.

This trip brought us inspiration and encouragement to continue making a difference in the Kauai food scenery — bringing authentic, soulful European flavors to our island in a way that feels refined yet deeply personal.

Here is our selection, for this coming meal

1- 🥂 Antipasto/Primo – Venetian Cicchetti Trio

Three traditional open-faced bites served on toasted sourdough bread:

• Baccalà mantecato (creamy whipped salt white fish, olive oil, chives)
• Sun-dried tomato caponata with herbs & EVOO
• Fresh house made ricotta with grape preserve & local honey

2- 🔥 Secondo – Chicken Alla Diavola, patate fondante al’orno

Deboned brick chicken with crispy golden skin, roasted with rosemary, olives, chili flakes & finished with fragrant Italian olive oil, vinegar and served with Roasted potatoes and Onions.

3- ☕🍯 DESSERT – Coffee, Honey & Prosecco Tiramisù

A Veneto-inspired twist on the classic tiramisù:

Espresso-soaked layers kissed with Prosecco, mascarpone cream, local honey drizzle, and cocoa.

Since 2020, what began as a side project has grown into something deeply meaningful to me. What we’ve built together isn’t just meal delivery — it’s been a shared exploration of culture, ingredients, and craftsmanship.

As I continue refining my vision and pushing toward a more elevated culinary future, I’m considering introducing something very special.

Once a month, instead of our traditional delivery format, I would host an ultra-intimate private dining experience — limited to 10 guests — in a client’s home.

This would allow me to create a level of experience that simply isn’t possible through delivery:

• Tableside carving of large-format proteins
• Flambé finishes and interactive elements
• Refined plated service
• Premium ingredients and seasonal tasting menus
• A true chef’s table atmosphere

It would be immersive, exclusive, and intentionally limited.

Back home in Kauai — inspired, grateful, and recharged. 🇮🇹✨

After spending a couple of weeks in the Venice region, immersed in its culinary traditions, markets, trattorias, and countryside kitchens, I’m reminded of something beautifully simple:

Some of the most memorable dishes I tasted were made with just a few ingredients — perfectly sourced, respectfully handled, and thoughtfully prepared.

A handful of components.
No unnecessary complexity.
Just balance, seasonality, and intention.

It was a powerful reminder that cooking, at its core, is not about how much you add — but about how well you choose.

That experience pushed me even further in my commitment to sourcing the best ingredients possible and letting them speak for themselves. Because sometimes, simplicity is the closest thing we have to perfection.

We’re excited to announce that very soon we’ll be offering a new meal experience inspired directly by what we lived and tasted in Italy — a curated culinary journey through the Veneto region.

Sumac onions, from this week’s meal !

Sumac is a deep-red spice made from dried berries of wild sumac shrubs. It’s prized for its bright, lemony tang—acidic without the juice.

Sumac onions come from the Eastern Mediterranean & Middle Eastern culinary tradition, especially the Levant (modern-day Lebanon, Syria, Palestine, Jordan) and Turkey.

Where they come from
• Ancient roots: Sumac has been used for thousands of years, well before lemons were common in the region. It was the go-to souring agent.
• Ottoman-era spread: During the Ottoman Empire, the pairing of raw onions with acidic elements (sumac, vinegar) became standard across Anatolia and the Levant.
• Street & grill culture: The combo stuck because it’s cheap, bold, and perfect with fatty grilled meats.

What it tastes like
• Tart, citrusy, slightly fruity
• No sweetness, no heat
• Think lemon zest + cranberry

Why cooks love it
• Adds acidity without moisture
• Keeps food bright instead of sharp

(Creamy Split+ English pea soup, mint, lemon sour cream, Parmesan)

Torta di Santiago, our dessert for this week!

Where is it from?

🇪🇸 The origins: almonds, pilgrims, and secrecy

The story begins in northwestern Spain, in Galicia, a region rich in almonds thanks to medieval trade routes. As early as the Middle Ages, almond-based sweets were common, especially in monasteries and convents, where recipes were guarded closely.

Pilgrims traveling the Camino de Santiago needed food that was:
• nourishing
• long-lasting
• easy to carry

An almond cake without flour fit perfectly. It was dense, protein-rich, and naturally gluten-free centuries before that was a concept.



✝️ The Cross of Saint James

The cake’s most iconic feature — the powdered-sugar silhouette of the Cross of Saint James — came later.

In 1924, a pastry chef in Santiago de Compostela began decorating the cake with the cross to distinguish it from other almond tortes. The symbol represents Saint James the Apostle, whose tomb pilgrims travel thousands of kilometers to honor.

Since then, the cross has become inseparable from the cake’s identity.

We are happy to announce we are back, and for a special meal planned for NEW YEAR’S EVE ! 🤯
This meal will feature exquisite Ingredients; 🤩🌟💫 perfect to share with your friends or loved ones and start year 2026 on a perfect note !

This Meal will be Delivered exclusively on December 31st, From Princeville ⬆️🚗, all the way to Kalaheo. ⬇️🚗
We will be delivering north shore in morning time (9am-2pm) 🌅
And delivering south shore in afternoon (3pm-6pm) 🌄
If you get your delivery early, simply leave it in your refrigerator until dinner time ! 🥶⏰

Meals are very limited (as some ingredients are shipped from my family in Europe) 🇪🇺

We are back next week for a quick meal before Thanksgiving season !

2. Tajine de volaille, olive et citron confit, pomme vapeur 🇲🇦🇩🇿🇹🇳
