They also offer catering services, as seen by their recent retirement party for an Army Nurse who served our Country for 25 years. I'm aware that it's been some time since my last post, owing to considerable activity. A new project is underway as I've been presented with the chance to have a residency at a cafe at City West in the Houston area's Industry Corridor, under the Orange by Fooda group. My plan is to specialize in Mexican food for the Taqueria segment and serve hamburgers and similar items at the grill segment. This represents a significant step forward for me and the growth of my passion. As we open on Tuesday, my crew and I are putting in extensive effort to guarantee a smooth opening and ongoing operations. Our establishment is called Nic's Canteena. FINALLY A LARGER COFFEE!!! If you know me you know I need coffee I. A bigger cup than the expresso little cups…🤷🏽‍♀️1st time at McDonald’s I. Paris and it’s awesome!!!! Our last night at the restaurant was last night and we had a full house! This one guy came in from Amsterdam to see us. We have had the best time ever these past few weeks. Au revoir DameJane for now. Who knows, maybe if everything aligns I will be back to do me and my cuisine. You just never know what the future holds! 🤔

What a day! Not too adventurous today. Today was getting out spot ready for service tomorrow. Lots of prepping and last minute things that have to be done. To a late lunch break at a Vietnamese restaurant then back to the restaurant for more prep. Tried
to see the Olympic flame pass through but we were too late so we had dinner and drinks with a really cool Artist who we met earlier this week. She introduced us to her friends. Took the rail home from of all places BELLVILLE!!!! That’s all for today folks! Not too exciting today but still pretty darn exciting still to be in Paris! Bonne nuit!!! At least until

Chef Nic’s Adventures in Paris:
Definitely not in Texas any more!!! It’s sprinkling so much adventure today was going down the street and grabbing a Pan de Chocolat croissant and an expresso. Now to unwrinkle the clothes and relax for the day. Super nice people and very helpful as well.
