A “galette des rois” or King Cake is a French cake traditionally shared at Epiphany, on 6 January and baked throughout January. It is made of an irresistibly creamy almond filling sandwiched between two flaky, buttery layers of puff pastry. Originally known as 'pain a la Duchesse' in it's native land, the word 'eclair' translates from French to 'flash of lighting'. Some say this is because of their primary sparkly glaze, while others say it refers to how quickly they are eaten - in a flash! I’d say the latter 😋. These ones are Vanilla diplomate cream filled, iced with whipped ganache.

My daughter turned One earlier this month and this was the birthday number cake I made for her. Lime, coconut & mascarpone, mango for the filling, topped with whipped cream.

Brunch this week-end ? These are A MUST. A baked pastry called Tigré. A moist financier dough, with burnt butter and an irresistible Anglaise base ganache. The cake is moist, flavorful, just sweet enough, and with just enough chocolate to satisfy any chocolate fan.
In French, "Tigre" means tiger, and the pattern of this pastry comes from the fact that it resembles a tiger. This chocolate almond financier is made with caramelized butter and imported Belgium chocolate!

First time I heard about Rose petals in Food I was like : “the flower, what the heck ?!”…Well the heck is that French do have certainly delectable desserts made from rosewater. The pastries like madeleines (like our signature Madeleine we bake at Ô choux) and macarons incorporate it for the aroma and often add bits of rose petals. Rose has a delicate flavour which is characteristically floral, fruity, perfume like and sweet. Aromatic and delicate, the taste of rose is a unique addition to a variety of food and beverage. This fragrant flower tastes like a combination of strawberries and green apples. Anyway, all of that to say that the Rose-Raspberry choux remains on the New Menu, as it is a signature choux of the house. By the way, do you know any desserts spots in Houston using Rose as well ?

To get to the bakery and dessert restaurant, take the Metro Red line and get off at the Main Street Square station. From there, walk south on Main Street towards St. Joseph Parkway for a few blocks until you reach the restaurant.
Alternatively, if you are driving, take I-45 South and exit at Gray Street. Turn right onto Bagby Street and continue until you reach St. Joseph Parkway. Turn left onto St. Joseph Parkway and "Ô choux" will be on your right-hand side.
Parking is available in a nearby lot with a fee or on street parking (metered).
