We had some star-quality snacks at Hutsell Elementary today with some very brave 4th-grade official taste testers for a MyPlate Education session!
Led by one of our Dietetic Interns, Andrea, the session encouraged students to be open to trying new and not-so-common fruits and vegetables. We explored some vibrant choices:

We’re wrapping up National Nutrition Month with a powerful truth: School meals are often the healthiest source of food in a child’s day! 🍎✨
The Research: A major study by Tufts University (published in JAMA Network Open) analyzed two decades of eating habits and found that schools are now the healthiest place Americans eat. According to the research:
✅School meals had the highest nutritional quality compared to food from grocery stores, restaurants, and worksites.
✅The "nutrition gap" is closing, with school food providing a consistent balance of whole grains, lean protein, and fiber that can be hard to replicate at home on a busy schedule. 📈🥦

Week 3 of National Nutrition Month is here!
🥛✨ We’re continuing to "Discover the Power of Nutrition" by looking at a staple on school trays: Milk.
Myth: School milk is just a carton full of added sugar. ❌
Fact: School milk is a nutrient-dense choice that has strict regulations on added sugar content! ✅
It’s important to remember that all milk contains lactose, a naturally occurring sugar that provides energy.
However, when it comes to added sugars:
Unflavored Milk: Contains zero added sugar.
Flavored Milk: Our chocolate and strawberry options have been significantly reformulated over the years to reduce added sugars while keeping the taste students love.
The Nutrition Payoff: Every carton delivers 13 essential nutrients, including Calcium, Vitamin D, and Protein, which are vital for bone health and muscle growth.
By offering flavored options with lower sugar, we ensure students get the calcium they need rather than choosing a sugary sports drink or soda. It’s all about providing the best balance for growing bodies! 🦴💪

We’re continuing our National Nutrition Month celebration by diving deeper into the science behind the tray! 🥗✨ This month, we’re on a mission to help our community "Discover the Power of Nutrition" by clearing up common misconceptions about school meals.
Myth: School lunches are high-calorie and unregulated. ❌
Fact: Every single meal at NFS is a carefully balanced "nutrition powerhouse" that meets strict Federal and State guidelines! ✅
Did you know that our menus are analyzed by 4 registered dietitians? To ensure your students are fueled for success, our meals must stay within specific weekly averages for:
Total Calories (Right-sized for each age group!)
Sodium & Added Sugars (Keeping hearts and energy levels steady.)
Total Fat & Saturated Fat (Focusing on the "good" fats.)
These standards ensure that while a meal might look like a student favorite (like a taco or a chicken bowl), it is prepared with whole grains, lean proteins, and low-sodium seasonings to meet the highest nutritional bars.

To wrap up our Registered Dietitian Day series, we are so excited to introduce our fourth and final team member: Dianna Sosa! 🍎✨
Dianna brings a deep sense of community to our department. For her, the school cafeteria is the heart of any school. When asked what keeps her inspired, she shared:
"I love the community aspect of this position, it drives me forward everyday... I love knowing the impact our team has on so many throughout our community, not just our students, but to know we help families across the district with one less thing to worry about: lunch. We’ve got it covered."
She also loves seeing that daily spark of joy in the lunchroom:
"Seeing the students’ smiles when they enter the cafeteria line. For many, it is one of their favorite times of the day."

Favorite school lunch meal: "My all time favorite is steak fingers served up with hot mashed potatoes! The ultimate comfort meal at school!"
The Breakfast Choice: She’s strictly Team Savory! "Omelettes, egg hashes, egg casseroles—honestly anything with eggs is my go to! So tasty and so nutritious!" 🍳

It’s time for Part 3 of our Registered Dietitian Day celebration! 🍎✨
Next, we are highlighting Danielle Tank, one of our dedicated Registered Dietitians who brings so much energy to our schools. If you’ve ever seen the "Discovering My Plate" presentations, you’ve seen Danielle in her element!
For Danielle, the best part of the job is the literal "face time" she gets with the students she serves:
"The most rewarding part is seeing happiness and joy in our students when they come to visit us in the lunch line. Their positive enthusiasm is infectious. Trying new foods together during our Discovering My Plate presentations is so much fun!"

Next we’re introducing you to Thao Vo, our Associate Director of Policy and Procurement. Thao plays a vital role in ensuring our meals are compliant, high-quality and accessible.
For Thao, school lunch is about much more than just food, it’s about equity and opportunity. When asked about her inspiration, she said:
"What inspired me to work in child nutrition is the idea that something as simple as a meal can change a student's day. When students are hungry, it's hard to focus... School nutrition programs remove that barrier."
She also loves seeing students expand their palates:
"We create a welcoming environment where every student has access to the same nutritious meal and can try new foods they may not have experienced before."

To celebrate, we are kicking off a 4-part series highlighting the incredible Registered Dietitians who fuel our students every single day. First up, Alexa Carrier, our Executive Director of Nutrition and Food Service.
Alexa’s passion for the next generation is at the heart of everything we do. When asked what inspired her path, she shared:
"I have always felt a strong pull to making a difference for the next generations and early on, I felt like that was in school nutrition. Then I loved it and stayed." 🍎
For Alexa, the "why" behind the work always comes back to the community:
"The most rewarding part is the people. Whether that is fueling a child for a day of learning or connecting to our 800+ staff so that they know they are valued and important to our students' success." ✅

Happy National Nutrition Month! 🍎✨ All month long, we’re celebrating the theme "Discover the Power of Nutrition" by clearing up some common myths and misconceptions about school food. To start the series, we would like to highlight our fruit and vegetable offerings.
Myth: School lunch lacks fresh variety. ❌
Fact: At NFS, we prioritize both freshness and student choice! ✅
Every day, our students are entrusted to build their own plates with a selection of 2 fruits and 2 vegetables at lunch service through a practice called, “Offer-Versus-Serve”. This concept empowers students to choose the food they love while helping us tackle food waste. While we strive to offer mostly fresh produce, we also include high-quality, student-approved options like craisins or frozen strawberry cups. By mixing various textures, temperatures, and vibrant colors, we ensure every tray is as appealing as it is nutritious.
Why does variety matter? According to research from the World Wildlife Fund (WWF), when students are empowered with "Offer-Versus-Serve" it significantly reduces food waste! Plus, studies from Harvard show that simply increasing the variety of vegetables offered can increase student consumption by over 16%. 📈🥦
By offering choice we’re providing exposure to healthy habits and ensuring more food ends up in bellies rather than the bin.

Katy ISD Food Service is a cafeteria that provides healthy and nutritious meals to children under 18 and enrolled students with disabilities up to 21 years old. The institution is an equal opportunity provider, ensuring that everyone has access to their services. They have recently started their summer feeding program at selected sites, where kids can enjoy delicious meals while having fun with their friends. Katy ISD Food Service also celebrates National Dairy Month by promoting the consumption of fat-free or low-fat milk, cheese, and yogurt daily. Although grab-and-go/curbside is not available this summer, dine-in service is available for breakfast and lunch. One of their sites that began on May 30th is Opportunity Awareness Center/Raines.
