The Levant is a historical and geographical term referring to the region in the Eastern Mediterranean that includes modern-day Lebanon, Syria, Israel, Jordan, Palestine, and even parts of Turkey and Egypt.

We have been studying, learning, and reworking to bring you a breathtakingly delicious and beautifully paired menu highlighting the cuisine of the Republic of Venice, which reflects its cosmopolitan identity, shaped by centuries of trade and control over the Adriatic Sea. As a major hub for the spice trade, Venice played a key role in introducing European kitchens to exotic spices that became essential in Venetian cooking, adding complexity and richness to many dishes.
As reflection of its prominence in global trade, Venetian cuisine became known for its bold and intricate flavors. The cuisine can be divided into three distinct categories based on the geography: the coast, the plains, and the mountains. This geographical diversity gives Venetian cuisine its rich variety, reflecting both the local landscape and cultural influences.

Weโre still thinking about the Myristica dessert from our 9-course menu from La Superbaโhonoring the introduction of the nutmeg spice to Italian cuisine through the ports of Genova. We incorporated all parts of the plant in the dish. Spiced yogurt cream with nutmeg fruit, topped with a mace and nutmeg cremeux inside a crunchy chocolate shell, finished with a delicate mace tuille.
